The Ancient Khorasan Wheat (Triticum Turanicum) is an ancestor of the present wheat that has not undergone the crossings and alterations of modern grains. Its origins are traced back to the area of ​​ancient Mesopotamia: Khorasan is in fact the name of a region of present-day Iran.

The Khorasan Wheat is the cereal from the most complete nutritional point of view, with a high content of selenium, a mineral that protects the body from damage by free radicals. Compared to common wheat it is also richer in other minerals including magnesium and zinc.

Its protein content represents the most important distinctive quality.

Given the high percentage of lipids, Khorasan Wheat is classified as a cereal with a high energy value associated with high digestibility.

Our flour is stone ground and therefore, not being particularly refined, it retains all the high nutritional qualities of the Khorasan Wheat.

Excellent for making homemade pasta, pizza and all types of desserts, including panettone.
