The olive harvest is over... as usual, I would like to inform you about the progress of the olive harvesting and oil production campaign (2020).
This summer (in Montalto di Castro) was very hot and dry, a climatic condition that did not al-low the fly (Dacus Oleae) to spread in our olive grove due to some fundamental factors:
1. unfavorable temperatures and humidity to the insect
2. use of a cultivar that produce late in the season (Canino grafted on wild olive tree) which never present phenological conditions (size of the olive) suitable for fly attack.
3. the early harvest that avoids the autumn fly attack
This approach is fundamental for us since we are in organic farming and do not use pesticides.
These three ingredients (cultivation area, cultivar used and early harvest) allow us to avoid fly infestations and to guarantee a high quality product.
It's been a few years that we have decided to:
· Harvest the product by October (although this involves a significant decrease in oil yield)
· Filter the product (an operation that determines a further increase in costs and a reduction in yields)
· Milling in the latest generation mill (mill that limits the contact of the aqueous fraction with the oleic one and does not recur to processes that generate the loss of volatile compounds that give important organoleptic notes typical of the fruity product).
All this because we are interested in ensuring a high standard of quality that allows us to have an oil with intense fruity and artichoke olfactory taste notes, with final harmonic sensations of bitter and spicy !!!!
Quality that has allowed us to be part of the small group of Italian Slow Food Presidia.
The oil is available from the next few days in 5-liter packs and in 0.5-liter bottles at the same price as in previous years.
