The quality of the milk, the hygienic conditions of the fold, the type of diet and the health of the livestock in order to guarantee the quality of the final product. Maturation minimum 60 days, time necessary to make dangerous microorganisms inactive. Raw processing that is without pasteurizing the milk that is processed as soon as it is milked, in order to preserve all the organoleptic and sensory properties of sheep's milk, giving the cheese an unforgettable taste and aroma.
Pecorino with irregular holes, white in color crossed by characteristic bluish-gray veins, with a decidedly spicy taste and a very intense aroma.
